Vegan Miso Ramen
*eGGcept the Egg ;)
*Heat some Sesame Oil in a medium Pot and add 3 cloves of minced garlic and 3 tsp minced ginger
*Stir for 2 minutes on medium heat and add 3-5 chopped scallions (depending on size)
*now add:
3 Tbs Miso Paste (I like to combine white and red)
2 Tbs Tahini
2 Tbs Chilli Paste (Gochujang)
Stir well until combined into a smooth paste
*then add:
1 Quart Vegetable Broth
1 Cup Oatmilk
3 Tbs Coconut Aminos (or Soy Sauce)
Salt, more Chili Paste and Chili Oil to taste
*Boil for 5 min
Meanwhile heat small pan with Sesame oil and fry the desired amount of Shiitake for about 5 min
then add Bok Choy & Corn
and cook until done
*Remove Pot from Heat and add Ramen brick.
Stir a few times and wait until done
*Serve with Sesame Seeds, Nori Sheets, Basil
and optionally Eggs
