Vegan Sweet Potato Chili

  • Sauté 1 chopped red onion in large pot with some olive oil until golden

  • Add 1 large diced sweet potato and stir occasionally for another minute

  • Mix in 1 can diced tomatoes, 1/2 cup vegetable broth, 1/2 can kidney beans and 1/2 can black beans

  • Throw in 2 minced cloves of garlic and 1/2- 1 cup of frozen corn

  • Add salt, pepper, cumin, chili powder, paprika and red pepper flakes and let sit until sweet potatoes are soft and everything combines well

  • Top with e.g. fresh cilantro, rosemary or thyme, lime juice, avocado, green onions
