Vegan Alfredo Pasta
In a large pot, bring saltwater to boil
Soak 1 cup of cashews in hot water for 10 min
In a pan, fry 1/2 diced onion until golden brown
Add 2 minced garlic cloves,
1/2 cup of frozen peas
and 4-6 diced green asparagus into pan and fry for a few more minutesonce the water in pot boils, add pasta until soft (keep some pasta water)
In a blender, add 3/4 cup plant milk,
2-3 tbs nutritional yeast,
juice of 1 lemon,
some salt and pepper
and drained cashews and blend until creamyAdd sauce and vegetables to the pot with the drained pasta
and stir in pasta water until consistency is just right.serves two
