Vegan Alfredo Pasta

  • In a large pot, bring saltwater to boil

  • Soak 1 cup of cashews in hot water for 10 min

  • In a pan, fry 1/2 diced onion until golden brown

  • Add 2 minced garlic cloves,
    1/2 cup of frozen peas
    and 4-6 diced green asparagus into pan and fry for a few more minutes

  • once the water in pot boils, add pasta until soft (keep some pasta water)

  • In a blender, add 3/4 cup plant milk,
    2-3 tbs nutritional yeast,
    juice of 1 lemon,
    some salt and pepper
    and drained cashews and blend until creamy

  • Add sauce and vegetables to the pot with the drained pasta
    and stir in pasta water until consistency is just right.
