Tofu Scramble

  • Dry a 10oz block of firm Tofu with a kitchen towel

  • meanwhile, cut cherry tomatoes, spinach leaves, green onions & mince 1 garlic clove and 1/4 red onion

  • crumble up the tofu and put into a large pan with olive oil

  • let the tofu cook for about 5 minutes on high heat while adding each 1 tsp of turmeric, paprika, cumin, 1 tbs Nutritional Yeast and some salt and pepper

  • turn heat down to medium and add veggies

  • slowly add small amounts of any desired plant milk and stir well

  • serve with any or all of the following: fresh cilantro, avocado, hot sauce, fresh bread
