Tofu Scramble
Dry a 10oz block of firm Tofu with a kitchen towel
meanwhile, cut cherry tomatoes, spinach leaves, green onions & mince 1 garlic clove and 1/4 red onion
crumble up the tofu and put into a large pan with olive oil
let the tofu cook for about 5 minutes on high heat while adding each 1 tsp of turmeric, paprika, cumin, 1 tbs Nutritional Yeast and some salt and pepper
turn heat down to medium and add veggies
slowly add small amounts of any desired plant milk and stir well
serve with any or all of the following: fresh cilantro, avocado, hot sauce, fresh bread
