Saag Paneer

* Cut the Paneer in 1 inch cubes and toss in large pot with sesame oil or ghee

* Add turmeric, cumin and cayenne powder and stir well until cheese is covered and gets this orange golden crust. Transfer the cheese into a separate bowl.

* Then add 1 tbs grated ginger & 2 grated cloves of garlic, 1/2 minced onion, 1/2 minced green serrano Chile (with seeds for extra spice!) and optional 1 diced tomato into pan on medium heat and stir for 1 min before adding 1 package of frozen chopped spinach (1lbs). Stir well until spinach is defrosted.

* Turn heat to low and add 1/3 cup plain yogurt & 2 Tbs Masala (I use store bought Butter Masala)

* Combine cheese and Spinach and serve with Rice
