Quinoa Bowl with Chickpeas and Kale Chips

For 2 large Servings:

  • Cook 1,5 cups Quinoa with 3 cups water or veggie broth

  • Meanwhile, place soaked chickpeas on an oven tray, spray with olive oil and add salt and pepper (if you use a can or glass, keep the chickpea liquid, called aquafaba, for amazing vegan recipes!)

  • Wash a bunch of curly Kale, strip the leaves off the stem, break them into small pieces and massage with a tsp olive oil. Add salt and pepper and place on a different oven tray

  • First, place the chickpeas in the oven for about 5 minutes (medium temp), then put the Kale in and take everything out. Once the Kale is slightly darker and some leaves are crispy (about 5-10 min). Once out the oven, the Kale will start to dry even more, so down wait until all the leaves are brown.

  • For the dressing: 2 Tbsp Olive oil, Juice of 1/2 Lemon, Salt, Pepper, Oregano, 1tsp Honey

  • Serve with vegan Feta Cheese and enjoy!
