Mediterranean Wrap

In a large Tortilla Wrap, place 1 tbs leftover quinoa, 1 tbs baked chickpeas (or hummus), 5 thinly sliced red grapes, thinly sliced cucumber and red onion, one red lettuce leaf, 1 tbs vegan feta cheese and the juice of 1/2 lemon.

fold wrap and fry in a small pan with olive oil until crispy and golden brown
