Mediterranean Cous Cous

  • Add 1 cup cous cous to a small bowl and cover in filtered water. Add water as needed and let sit until it's soft

  • In a large bowl, combine:
    - 1 tsp salt
    - 2 tsp fresh or dried oregano
    - 2 tsp fresh or dried mint
    - sliced black olives (10-20)
    - halved cherry tomatoes (10-15)
    - 1/2 diced cucumber
    - 3/4 cup (vegan) feta cheese
    - 1/2 minced red onion
    - 1-2 minced garlic cloves
    - zest of 1/3 lemon
    - juice of 1 lemon
    - 3-4 tbs Olive oil
    - 1 tbs rice vinegar

  • Add cous cous to bowl and stir well
