Vegan Lemon Pancakes

  • In a large Bowl, mix:
    - 1 ½ Cups of flour
    - 1 tbsp baking powder
    - 1 tsp salt

  • Add:
    - 1½ cups almond milk (or oat, soy etc),
    - 1 tsp maple syrup
    - 1tsp olive oil
    - Juice and (minced) zest of 1/2 lemon

  • stir well and transfer 1/4 cup of the batter at a time into pan with olive oil on low heat. Flip until golden brown on both sides and enjoy with blueberries and syrup.
