Jicama Tofu Tacos

  • mince 1/2 red onion and fry in a large pan with 1 tbs coconutoil

  • crumble firm tofu into small pieces (or cut in extra small cubes) and add to pan

  • mince 5-8 medium sized mushrooms (i used crimini) and mix in with tofu and onion

  • spice with salt, pepper, chilli flakes, paprika

  • In the meantime, prepare Guacamole:
    Mince 1/4 red onion and place in a medium bowl with 2 Avocados, 3 garlic cloves, juice of 1 lime, salt, pepper, chilli flakes. Mix and smoosh well

  • Slice a large Jicama thinly into taco shells.

  • place the tofu mix and Guacamole into you Jicama Shell and enjoy without cheese or by topping with feta crumbles.
